This is an iconic wine that revives an ancestral legacy, a treasure left to us by our ancestors. This legacy is the Forcada grape variety, unique and very special, which we are sure will go VIRAL. Pinord has chosen this variety for its exceptional organoleptic characteristics, its vibrancy, acidity, and body, making it ideal for producing complex, gastronomic white wines with long aging potential. Terroir

The organic vineyard of Camps de la Rasa, located in the upper Penedès region, benefits from a limestone soil that enhances the wine’s unique characteristics. A Mediterranean climate with continental influences creates significant temperature variations between day and night, promoting optimal grape maturation while preserving the freshness and acidity essential to the wine’s quality.

Winemaking Process

This wine is the result of four years of experimental winemaking to determine the best technique for maximizing its potential. Every aspect, from the vineyard to bottling, follows both astral and biodynamic principles to achieve the best outcome. The grapes, hand-harvested and carefully selected in the vineyard, undergo cold maceration before being gently pressed to separate the free-run juice. Fermentation occurs in a granite egg, which enhances the variety’s salinity at a low temperature over approximately three weeks. Afterward, the finest lees are separated, and the wine is left to rest in the same egg, with weekly batonnage for a year, adding volume and complexity.

Appearance

A light golden or pale yellow color with bright green reflections.

Aroma

The aroma is fresh and intense, with notes of white fruit such as pear and green apple, along with citrus hints of lemon and mandarin. Floral notes of white flowers are also present, along with a pronounced mineral and saline character that reflects the limestone soil.

Taste

On the palate, this wine has great volume and structure, with a well-balanced acidity that induces salivation without being overwhelming. White fruit notes such as pear and apricot blend with subtle citrus and floral hints, like acacia blossom, creating a fresh and clean sensation. Its minerality and salinity add depth, while the finish is long, silky, and very persistent, leaving an elegant and refined impression.

It is ideal for pairing with raw seafood such as oysters or grilled prawns, as well as baked white fish like sole or cod. It also pairs well with salads featuring fresh cheese or ceviches. Soft cheeses, such as Manchego or Brie, and dishes with herbal notes, like truffle risotto, are also excellent choices to fully enjoy this wine’s elegance and freshness.
