D.O. Rueda
Vaquos
Essence of the wine
This wine line represents a wine from each of the wineries where we produce in Spain. As seen on the labels, the circle symbolizes the three key elements that make each wine unique according to its region: SUN, WATER, and SOIL. The different terroirs in these regions ensure that each wine has its own special characteristics that make it unique. The circle on each label changes in colors and textures, depending on the hours of sunlight, the amount of water, and the type of soil that influence the vineyards in each area.
Variety
Verdejo 100%
Terroir
The terroir of Rueda is characterized by a great diversity of soils, predominantly slate, sandy, and calcareous clay. This variety of soils, combined with the area's altitude, promotes slow and optimal ripening of the grapes. The influence of the Duero River and the extreme temperatures, with cold winters and hot summers, create the perfect balance between freshness and ripening, resulting in wines with great aromatic intensity and personality.
Winemaking Process
Harvesting takes place at night to ensure the grapes arrive fresh at the winery. The stems are removed, the grapes are gently pressed, and the free-run juice undergoes static settling. Fermentation occurs at a controlled temperature to preserve the full aromatic potential of the variety. The wine is then bottled.
Appearance
Straw yellow with greenish highlights.
Aroma
Intense, with a base of tropical fruit and citrus notes, complemented by hints of anise and minerality.
Taste
On the palate, it stands out for its notes of citrus and tropical fruits, with a herbal touch and subtle minerality. It has a fresh and vibrant entry, with pleasant acidity. Light, well-balanced, and incredibly refreshing.
Serving temperature
6º
Food pairing and serving
Pairs perfectly with light and fresh dishes, such as grilled or baked white fish, seafood (shrimp, oysters, mussels), salads with fresh ingredients, soft cheeses like goat cheese or brie, and seafood paella or light risottos. Its crisp acidity and freshness enhance the delicate flavors of these dishes.
