Terroir
The terroir of Penedès is known for its diverse soils and microclimates, ranging from limestone to clay-rich terrains, which enhance the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripening, resulting in wines of great complexity and character.
Winemaking Process
We harvest the grapes at their optimal ripeness. The grapes are fermented and left to macerate with their skins at cold temperatures for about 20 days. Afterward, we perform the blending and age the wine in tanks for 6 months, followed by bottle aging. The stainless steel tanks are cleaned following kosher regulations. Each tank is sealed, signed, and stamped with the Kosher seal twice. All handling in the winery and the entire winemaking process—including pressing, fermentation, filtration, cooling, clarification, and bottling—has been carried out by a rabbi. All ingredients used are kosher for Passover.
Appearance
This wine has a ruby red color with violet highlights, adding intensity and appeal.
Aroma
On the nose, fresh red fruits such as cherries and raspberries stand out, accompanied by notes of dark fruits like plums. Subtle spicy nuances add a pleasant complexity.
Taste
On the palate, it is a fresh and well-balanced wine, with soft tannins and well-integrated acidity. The flavors of red fruits such as cherries and raspberries reappear, complemented by a delicate touch of spices that round out the profile. The finish is clean and pleasant, leaving a refreshing sensation.
