Terroir

The Penedès terroir is characterized by its diverse soils and microclimates, ranging from limestone to clay-based terrains, which enhance the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains create a perfect balance between freshness and ripening, resulting in wines of great complexity and personality.

Winemaking Process

We harvest the grapes at night to preserve the aromas as much as possible. We vinify and ferment the two grape varieties separately and leave them to macerate on the skins in cold temperatures for about 20 days. Afterward, we carry out the coupage and age the wine in tanks for 6 months, followed by bottle aging. The stainless steel tanks have been cleaned following kosher regulations. Each tank is sealed, signed, and stamped with the Kosher certification twice. All handling in the winery and the entire winemaking process—from pressing, fermentation, filtration, cooling, clarification, and bottling—has been carried out by a rabbi. And all the products used are kosher for Passover.

Food pairing and serving

Perfect to accompany roast beef, grilled ribeye, or confit duck. It also pairs wonderfully with kosher cheeses such as manchego, gouda, or cheddar. Pasta with tomato sauce or meat ragù is another excellent match, as well as side dishes like gratin potatoes or roasted vegetables. All these dishes are prepared in strict accordance with Kashrut laws.
