Terroir

The Penedès terroir is characterized by its diversity of soils and microclimates, ranging from limestone to clay soils, which enhance the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, producing wines of great complexity and personality.

Winemaking Process

The three grape varieties are hand-harvested at their optimal ripeness. Then, we vinify and ferment the three varieties separately, carry out the blending, and the second fermentation takes place in the bottle for more than twelve months following the traditional method. The stainless steel tanks have been cleaned according to kosher regulations. Each tank is sealed, signed, and stamped with the Kosher certification twice. All handling in the winery and the winemaking process - from pressing, fermentation, filtration, cooling, clarification, and bottling - has been carried out by a rabbi. All the ingredients used are kosher for Passover.
