Essence of the wine

Red Bat represents our commitment to sustainability and environmental protection. This wine is part of a collaborative project with the World Nature Foundation, dedicated to preserving bats, a species at risk of extinction. Bats are essential allies in agriculture, as they naturally control pests, contributing to the balance of ecosystems.

Terroir

The terroir of our Priorat estate is unique, characterized by its poor, rocky soil with a strong presence of licorella, which imparts exceptional minerality to the wines. Combined with the warm, dry climate, this environment produces intense, structured wines with a depth that reflects the region's identity.

Winemaking Process

Harvesting is done by hand, with the grapes carefully selected at the sorting table. They are then cold-macerated in small pre-fermentation tanks for three days. Fermentation lasts 18 days. After fermentation, the wine is gently pressed and transferred to oak barrels, where it undergoes malolactic fermentation to soften its acidity and enhance complexity. Following a controlled aging process that refines its aromas and structure, the wine is stabilized, filtered, and bottled, resting before release to reach its full expression.

Appearance

Dark mahogany color with violet hues, clean and bright.

Aroma

Intense notes of fresh red fruit, with hints of blackberry and subtle mineral and spicy undertones.

Taste

Fruity flavors stand out, well-balanced with the wine’s body. It has a high concentration of soft tannins that provide a smooth and pleasant mouthfeel.

With its characteristic intensity and freshness from Priorat, Red Bat pairs perfectly with grilled meats, such as seared entrecôte or roasted lamb with a touch of herbs. It also pairs beautifully with tapas like chorizo, cured meats, or red sauces, where its soft tannins and fresh fruit complement the intense flavors of the tapas. Additionally, it goes well with vegetable dishes, such as omelets, grilled vegetables, or pan-seared fish, where its freshness and structure harmonize with lighter flavors. For cheese lovers, semi-cured cheeses like Manchego or goat cheese are an excellent match.
