D.O. Penedès
Nox White Snow
Essence of the wine
This is a sustainable project featuring labels with owls, our allies in organic and biodynamic agriculture. These magnificent creatures help us combat diseases and protect our crops naturally. Since owls are endangered, we have partnered with the World Nation Foundation to support their conservation. It’s a project that everyone can be part of, as a portion of the proceeds from each bottle sold goes directly to preserving endangered species.
Variety
Xarel·lo 50%, Macabeo 45%, 5% Moscato
Terroir
The Penedès terroir is known for its diverse soils and microclimates, ranging from limestone to clay, which enhances the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, resulting in wines of great complexity and character.
Winemaking Process
The grapes are harvested at night to ensure they arrive fresh at the winery, preserving their most intense aromas. Each grape variety is vinified separately using gentle pressing to obtain the free-run juice. Fermentation is carried out at controlled temperatures to preserve the fruity and floral aromas, as well as the wine’s structure and acidity. The final blend is then assembled and left to rest for a few weeks before bottling.
Appearance
Pale green in color, bright and very attractive.
Aroma
The nose shows great aromatic complexity, with citrus notes like green apple and delicate floral hints, along with white fruit aromas such as pear. Subtle mineral and saline touches add freshness and depth.
Taste
On the palate, it is fresh and vibrant, with well-integrated acidity that gives it lively character. The texture is light and silky, with a smooth yet well-structured mouthfeel that provides volume. Citrus and white fruit notes persist, and the finish is long, clean, and mineral, with a subtle saline sensation that invites you to keep enjoying the wine.
Serving temperature
6º
Food pairing and serving
It pairs perfectly with grilled white fish such as sole, cod, or monkfish, as well as fresh salads with cucumber, tomato, and vegetables. It also pairs well with rice dishes, baked fish, light pasta dishes—like pasta with lemon and basil sauce—or mild cheeses such as fresh goat cheese. For more exotic options, like fish ceviche or salmon carpaccio with citrus, it’s the perfect accompaniment. Overall, Nox Blanc creates a fresh, balanced, and vibrant gastronomic experience.
