Terroir

The Penedès terroir is known for its diverse soils and microclimates, ranging from limestone to clay soils, which enhance the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripening, resulting in wines with great complexity and personality.

Winemaking Process

The wine is produced from a carefully selected harvest, using only the first-press juice (mosto flor) to ensure the highest quality. Fermentation takes place at low temperatures to preserve the fruit aromas and terroir character. After fermentation, the wine remains on its fine lees for four months, with periodic battonage to enhance structure and complexity. Finally, it is bottled and left to age for at least two months before release.

Appearance

Bright yellow with greenish reflections, clean and brilliant.

Aroma

A complex wine on the nose, with fresh fruit aromas such as green apple, pear, and citrus. There are also hints of fennel, saline notes due to the proximity of the sea, and mineral aromas from the calcareous soil of the vineyards.

Taste

A fresh wine with good acidity and structure. The aromas detected on the nose carry through to the palate, where the battonage on the lees ensures a perfect balance between acidity and volume. Persistent and well-balanced.

Food pairing and serving

This wine pairs perfectly with grilled blue fish, fresh seafood, and seafood rice dishes, as its acidity and structure balance the marine flavors. It also pairs wonderfully with semi-cured and aged cheeses like Manchego, Pecorino, or goat cheese, as well as blue cheeses such as Roquefort, where its complexity stands out. Additionally, it is excellent with fruit salads, grilled white meats like chicken or lightly spiced lamb, and even Mediterranean dishes such as vegetable paella or fideuà.
