Winemaking Process
After careful selection, the grapes are gently pressed and fermented. Fermentation takes place in hermetically sealed tanks to retain the natural carbon dioxide, which forms the fine bubbles that characterize this sparkling wine. Approximately halfway through fermentation, the process is stopped using cold temperatures, allowing a significant portion of the natural sugars in the must to remain in the wine, providing a naturally smooth texture.
