Winemaking Process
After a manual harvest, the grapes undergo careful maceration and pressing to obtain the free-run juice. This undergoes a static settling process for 24-48 hours before the first fermentation in stainless steel tanks. Later, using the traditional method, the second fermentation takes place in the bottle. The bottles then rest in underground cellars for at least 15 months before clarification and disgorgement.

Cherry pink color with bright reddish reflections. Displays an endless stream of fine bubbles.
