Essence of the wine

Suspirum is a very special cava, handcrafted with over six years of aging. Its name comes from the soft sighs of satisfaction that workers emit during the artisanal process, reflecting the care and dedication put into crafting each bottle. Moreover, those who taste it can’t help but let out a “suspirum” of pleasure as they savor its flavor. Josep Mª sought to convey through a poem on the label that there is no need to wait for a special occasion to enjoy a good cava, as we never know what life has in store. Any moment, whether alone, with a partner, or among friends, can be the perfect moment. With a limited production of fewer than 3,000 bottles, Suspirum is a gem that invites you to celebrate every moment in life.

Xarel·lo 60%, Macabeo 25%, Parellada 10%, Chardonnay 5%

Terroir

Unique organic and biodynamic vineyards located in the Alt Penedès region. Mediterranean climate with continental influences. Limestone and clay soils, with good sun exposure and natural ventilation that allow for optimal grape ripening. The significant temperature variations between day and night help preserve the acidity and freshness of the varieties.

Winemaking Process

Each grape variety is harvested and vinified separately. After manual harvesting, the grapes undergo careful pressing to extract the free-run juice. This undergoes static settling for 24-48 hours before the first fermentation in stainless steel tanks. The blend is then created, and through the traditional method, the second fermentation takes place in the bottle. The bottles are aged in underground cellars for a minimum of 72 months before clarification and disgorgement.

Appearance

Clean golden tones, with gentle streams of small bubbles forming delicate beads up to the surface.

Aroma

Intense notes of exotic fruits typical of the Chardonnay grape, with tertiary aromas from the aging on lees, such as pastry and nuts.

Taste

Full-bodied and well-structured. On the palate, it features a smooth and even effervescence. Its passage through the mouth is silky, showcasing its aging process. Fruity flavors emerge, with a long and elegant persistence.

This cava is elegant and sophisticated, perfect for pairing with dishes that highlight its freshness and complexity. It pairs wonderfully with white fish dishes, such as prawns or fresh tuna, as well as fish tartare, seafood, foie gras, or soft-aged cheeses like Manchego or Comté. It is also ideal for more creative cuisine, such as truffle mushroom risotto or asparagus and mascarpone-filled pasta. Its fruity and elegant character makes it perfect to enjoy with informal appetizers, such as smoked salmon canapés, Iberian ham, or high-quality cured meats, offering versatility for any special occasion.
