D.O. Cava
Marrugat Brut Nature Gran Reserva Rima 32
Essence of the wine
The Rima 32 cava has a very special story. Joan Josep Tetas wanted to surprise his wife, Rosa Mª, for their 25th wedding anniversary, by creating a unique cava with different grape varieties. He selected an exclusive bottle and placed it in rhyme number 32 of the cellar for aging. The workers secretly started calling it "the one from rhyme 32", and this name endured as a legacy, becoming the name of a cava with great history.
Variety
Chardonnay 50%, Pinot Noir 50%
Terroir
The organic and biodynamic Chardonnay from Finca Muntanyans comes from the l'Alzina plot, a limestone terrain with excellent conditions for cultivation. The organic Pinot Noir, grown at 600 meters of altitude, benefits from a cool microclimate, allowing for slow and balanced ripening, preserving freshness and natural acidity.
Winemaking Process
Each grape variety is harvested and vinified separately. After manual harvesting, the grapes undergo gentle pressing to extract the free-run juice. This is then subjected to a static settling process of 24-48 hours before undergoing first fermentation in stainless steel tanks. The blend is then created, and through the traditional method, the second fermentation occurs in the bottle. The bottles are aged in underground cellars for a minimum of 60 months before riddling and disgorgement.
Appearance
Yellow with slight grayish tones. Brilliant, with a gentle release of small bubbles that form a compact crown at the end.
Aroma
Highly complex, powerful, and intense. It recalls fruits like apple and apricot, as well as refined tropical fruits. Tertiary aromas from aging also emerge, still developing but increasing over time.
Taste
Elegant and refined, with a very fine effervescence. Fresh, with great body and persistence, making it a cava of great personality.
Serving temperature
6º
Food pairing and serving
Perfectly pairs with seafood, such as prawns or oysters, white fish like tuna or sole, soft cheeses such as brie, and more elaborate dishes like foie gras, mushroom risottos, or white meats. It is also ideal for appetizers, such as smoked salmon canapés or Iberian ham, thanks to its freshness and complexity.
