Essence of the wine
Lluna Nova is named because the entire production process, from the vineyard to the bottle, follows the phases of the moon according to Maria Thun's biodynamic calendar. Guided by this natural cycle, we work the land and care for the vines to enhance their vitality and achieve the purest expression of the grape. The result is a fresh, gastronomic wine full of energy. Limited production: 2556 bottles.

Terroir
It comes from our Mas Muntanyans estate, specifically from the El Serral plot, where vines over 90 years old are cultivated organically and biodynamically, respecting the environment. The highly calcareous soil is ideal for vinifying this unique wine. The fresh breeze from the Mediterranean Sea influences its character, giving it an unmistakable personality.
Winemaking Process
After ripeness checks, while waiting for the optimal harvest point, we hand-pick the grapes to select the best ones. Once at the winery, we carry out a gentle pressing, separating the free-run juice, which we use to make our wine. Fermentation takes place in barrels, where the wine remains for 9 months, while we perform batonnage to encourage maturation with the fermentation lees, seeking creaminess and elegance. After several tastings, we bottle it. Since it is a wine with great personality, we control and minimize clarification and filtration processes as much as possible to maintain its full identity. Once bottled, it rests and matures for at least one year before reaching the consumer with its full expressiveness.
Appearance
Pale yellow with greenish and some golden reflections. Clean and bright.
Aroma
On the nose, it stands out with an attractive combination of white fruit, such as green apple, citrus, and subtle floral aromas like fennel, broom, and rosemary. We also find hints of dried fruits, a delicate touch of wood, as well as saline and mineral aromas that evoke the sun.
Taste
On the palate, it is elegant and well-balanced, with fresh acidity that brings liveliness. White fruit and citrus notes blend with a creamy texture and a subtle touch of wood. Saline and mineral aromas add freshness, while the long, elegant finish leaves a slight reminiscence of dried fruits. After 7 years, the wine remains in excellent condition.

This wine is ideal for pairing with a wide variety of dishes. It pairs perfectly with white fish and seafood, such as salmon, grilled shrimp, or baked fish. It also goes well with fruit and nut salads, as well as rice and pasta dishes, adding great depth thanks to its balanced acidity. Aged hard cheeses, such as pecorino or manchego, complement its herbal notes. Additionally, Asian cuisine, such as sushi or tempura, pairs perfectly with its citrus and floral aromas.
