Terroir

The terroir of the Syrah vines from Montsant is characterized by licorella soils, which provide a unique structure and minerality to the wines. This soil, rich in minerals, adds depth and complexity, while the continental Mediterranean climate, with cold winters and hot summers, promotes slow and even ripening. This combination allows the wines to express the full character and personality of the terroir, with great intensity and elegance.

Winemaking Process

Once the grapes arrive at the winery, they ferment and are left to macerate at a controlled temperature for about 10 days to extract all of their fruit and complexity. After this period, they are pressed and, following several racking processes, the wine is transferred to 500-litre oak barrels for aging between three and four months to round out the wine. Finally, it is bottled and will continue its aging in bottle until it is released to the market.

Clear and bright, with violet and blue hues.

Aroma

The fruit stands out strongly, especially blackberries and violets. If the tasting glass continues to be aerated, notes of raspberry, dried figs, spices, and chocolate emerge. Floral aromas and the minerality of the terroir can also be appreciated.

Taste

On the palate, this wine is powerful and well-structured, with a vibrant acidity that provides freshness and balance. The ripe fruit, especially blackberries, raspberries, and dried figs, unfolds with intensity, accompanied by a touch of spice and chocolate that gives it great complexity. The texture is smooth and silky, with well-integrated tannins that provide a sense of fullness. The minerality of the terroir is present on the finish, leaving a long and very elegant aftertaste.

It pairs wonderfully with gourmet tapas, grilled meats, or with spiced and red sauces. It’s also ideal for dishes with sauces like pesto, which perfectly complement the fruit and spice notes of the wine. Additionally, it pairs well with cannelloni with rich sauces, grilled fish, such as salmon, and red meats like steak or ribs, providing a balanced and intense pairing.
