Essence of the wine

Dibon refers to the name of the family estate, Masía Dibon. It is mainly produced from vineyards located in the heart of Penedès, next to the estate and close to it. For this reason, the cava is named Dibon, as a tribute to our roots and family tradition, directly linked to the place where it was born and which has witnessed our history.

Terroir

The Penedès terroir is characterized by its diversity of soils and microclimates, ranging from limestone to clay soils, which favor the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, providing wines with great complexity and personality.

Winemaking Process

We select and process the different grape varieties separately, choosing only the best grapes from each plot. Fermentation is carried out at a low temperature to preserve fresh and fruity aromas to the fullest. Afterwards, we blend the varieties, ensuring perfect balance. Then, the second fermentation begins in the bottle, where the cava rests for approximately 14 months, acquiring a delicate, elegant, and well-integrated bubble. Once the process is complete, disgorging takes place, and the cava rests in the winery for one month before being released.

Appearance

Pale yellow color with greenish hues, accompanied by a fine and persistent bubble, very elegant.

Aroma

Aromas of fruits such as pear and peach stand out, along with citrus, floral, and dried fruit notes from the bottle aging. Mineral and saline nuances can also be perceived, reflecting the proximity to the sea.

Taste

On the palate, this cava presents a fine and well-integrated bubble, giving it a smooth and very elegant texture. Its flavor profile is harmonious, with a subtle sweet touch that blends perfectly with fruit notes such as lime, pear, and light citrus nuances. The moderate acidity provides freshness without overpowering the softness that characterizes this semi-dry cava. The finish is delicately sweet, with balanced persistence that leaves a pleasant and rounded sensation on the palate.

The Dibon Semi Dry is a versatile cava that pairs perfectly with a wide range of dishes. Its freshness and balance make it ideal to accompany appetizers such as nuts, soft cheeses, and foie gras. Its slight sweetness harmonizes with Asian dishes such as sushi, tempura, or lacquered duck, as well as Mediterranean cuisine, especially seafood, rice dishes, and white fish. It is also an excellent choice for light desserts such as fruit tarts or creamy desserts.
