Dibon Ice
Essence of the wine
Dibon takes its name from the family estate, Masia Dibon. It is made primarily from vineyards located in the heart of Penedès, right next to the estate and close to it. That is why this cava carries the name Dibon, as a tribute to our roots and family tradition, directly linked to the place where it was born and which has witnessed our history.

Terroir
The terroir of Penedès is characterized by its diverse soils and microclimates, ranging from limestone to clay-rich soils, which allow each grape variety to express its unique character. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, resulting in wines of great complexity and personality.
Winemaking Process
We carefully select and vinify each grape variety separately, choosing only the best grapes from each plot. Fermentation is carried out at low temperatures to preserve the fresh and fruity aromas to the fullest. Afterward, we blend the varieties to achieve the perfect balance. The second fermentation then begins in the bottle, where the cava rests for approximately 14 months, developing a delicate, elegant, and well-integrated bubble. Once the process is complete, disgorgement is carried out, and the cava is aged in the cellar for one month before being released to the market.
Appearance
Pale yellow color with greenish hues, accompanied by fine and persistent bubbles, exuding elegance.
Aroma
Fresh aromas of white fruits such as green apple, pear, and pineapple stand out, with a hint of nectarine citrus. Ripe fruit notes, including melon and grapes, also appear, complemented by floral hints of orange blossom and acacia. Subtle notes of dried fruits, such as almonds, add complexity, while a slight mineral touch evokes the proximity of the sea.
Taste
On the palate, this cava presents fine, well-integrated bubbles that create a creamy and delicate mouthfeel. Fruity flavors of ripe pear, pineapple, and a subtle hint of mango blend with a light touch of lime, adding freshness. Floral notes of orange blossom and acacia emerge, contributing complexity and elegance. The palate also reveals delicate hints of dried fruits, such as walnuts and almonds, with a slight saline reminiscence reminiscent of the sea. The finish is clean, elegant, and persistent, with a light minerality that completes the experience.
