Essence of the wine

Dibon is named after the family estate, Masia Dibon. It is mainly produced from vineyards located in the heart of Penedès, next to the estate and close to it. For this reason, the cava is named Dibon, as a tribute to our roots and family tradition, directly linked to the place where it was born and which has been a witness to our history.

Terroir

The terroir of Penedès is characterized by its diversity of soils and microclimates, ranging from calcareous to clayey terrains, which enhances the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, providing wines with great complexity and personality.

Winemaking Process

This cava is made from a careful selection of Garnacha grapes, cultivated in high-altitude vineyards in Alt Penedès. After harvest, a short maceration with the grape skins is carried out to obtain the desired color, followed by gentle pressing to extract the free-run juice. This juice undergoes static settling for 24-48 hours before starting alcoholic fermentation in stainless steel tanks at low temperatures, helping to preserve fresh and fruity aromas. Subsequently, following the traditional method, the second fermentation takes place in the bottle. The bottles rest in the cellar for about 15 months before being clarified and disgorged, allowing the rosé cava to acquire complexity, elegance, and a fine, well-integrated bubble.

Appearance

It presents red fruit tones with violet hues. Its fine and persistent bubbles enhance its freshness, giving it an elegant and vibrant appearance.

Aroma

We can appreciate an intense freshness with notes of red fruits such as strawberry, raspberry, and cherry, complemented by delicate floral hints of rose and orange blossom. A subtle background of citrus notes and a mineral touch add complexity, reflecting its elegance and freshness.

Taste

It is characterized by a fine, well-integrated bubble that provides a smooth and refreshing sensation. Its well-balanced acidity contributes to an elegant structure, while notes of red fruits such as strawberry and cherry combine with a slight citrus and dark fruit touch. The finish is clean and persistent, with a subtle mineral aftertaste that invites continued enjoyment.

t's ideal for pairing with seafood like shrimp carpaccio or grilled prawns, as well as tuna. It complements perfectly with fresh salads featuring strawberries or goat cheese, and pasta dishes with sauces like pesto or tomato. It also pairs wonderfully with pizzas and spiced dishes, as well as lightly spicy foods. When it comes to meats, it goes perfectly with grilled chicken. Finally, it's an excellent choice for pairing with desserts such as berry tarts or raspberry mousse, enhancing its fruity freshness.
