Essence of the wine

Dibon is named after the family estate, Masia Dibon. It is primarily crafted from vineyards located in the heart of Penedès, right next to the estate and its surrounding lands. That is why this Cava bears the name Dibon, as a tribute to our roots and family tradition, directly linking the sparkling wine to the place where it was born and has witnessed our history.

Terroir

The Penedès terroir is characterized by its diversity of soils and microclimates, ranging from limestone to clay soils, which favor the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, providing wines with great complexity and personality.

Winemaking Process

A meticulous grape selection takes place in the vineyard, with each variety harvested and vinified separately. The grapes are carefully pressed to obtain the free-run juice, which undergoes a static settling process for 24 to 48 hours before the first fermentation in tanks. Afterwards, the blending process takes place, and using the traditional method, the second fermentation occurs in the bottle. The bottles are then aged in the cellar for approximately 15 months before clarification and disgorging

Appearance

It presents a pale, bright yellow color with green and golden highlights, accompanied by fine, persistent, and very elegant bubbles.

Aroma

The aroma is clean and intense, with citrus notes of lemon and green apple, floral hints reminiscent of apple blossom and acacia, and saline and mineral nuances from its proximity to the Mediterranean Sea. A subtle touch of dried fruits from aging adds complexity.

Taste

On the palate, it reveals fine, elegant bubbles. Well-balanced acidity provides structure and freshness. Green apple, citrus notes, and a hint of almonds contribute to its complexity and depth. The bubbles integrate seamlessly, creating a silky and delicate mouthfeel. The finish is clean and persistent, with a light minerality that invites continued enjoyment.

Food pairing and serving

Perfect for pairing with seafood and fresh fish, such as white fish ceviche or grilled king prawns, as well as creamy cheeses like Brie or Camembert. It also complements light appetisers beautifully, such as tuna tartare or citrus salads, and works wonderfully with rice dishes like a seafood stew or a vegetable paella. To finish, its refreshing notes pair perfectly with light desserts, such as a fresh fruit tart or a zesty lemon sorbet, creating a perfect balance of flavours.
