Tempranillo 85%, Cabernet Sauvignon 10%, Merlot 5%
Terroir
The terroir of Penedès is renowned for its diverse soils and microclimates, ranging from limestone to clay, which enhances the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, resulting in wines of great complexity and character.
Winemaking Process
Grapes are carefully selected both in the vineyard and at the winery. The winemaking process begins with the separate vinification of each grape variety, allowing for precise control over their specific characteristics. The maceration of the must with the skins lasts between three weeks and one month, ensuring optimal extraction of color, aromas, and tannins that contribute structure and complexity to the wine. After the necessary rackings for clarification and stabilization, the wine is transferred to oak barrels, where it matures for two years, integrating with the wood and developing subtle nuances and greater complexity. Finally, it is bottled to continue its evolution for at least another year, refining its characteristics and achieving greater harmony and elegance.
Appearance
Intense garnet red with tile-like hues that reflect its aging. Bright, clean, and with good consistency.
Aroma
Intense aromas of cherries and blackberries, perfectly blended with spicy notes from the oak. The barrel aging adds complexity, with hints of vanilla and subtle smoky notes, creating a rich, balanced, and sophisticated bouquet.
Taste
Elegant structure, with soft, well-integrated tannins that give it a silky texture. The balanced acidity enhances freshness, complementing the fruity and spicy notes. The finish is long and persistent, with a subtle oak aftertaste and hints of ripe fruit that invite another sip.
Serving temperature
18º
Food pairing and serving
An elegant and refined wine, perfect for pairing with bold dishes such as beef tartare, aged beef carpaccio, grilled red meats, and roasted lamb with Provençal herbs, highlighting its spicy notes and oak nuances. It also pairs beautifully with cured meats, stews such as ragù or braised wild boar, and legume dishes like beans with sausages. Traditional rice dishes and aged cheeses such as Manchego or Roquefort complement its finesse. For dessert, a chocolate tart with red berries or a brownie with vanilla ice cream accentuates its elegance and sophistication.
