Chateldon Reserva
Essence of the wine
The name Chateldon comes from the union of "Chato", referring to the estate's farmhouse, and "Cabernet Sauvignon", the grape variety used to make this wine. The label features the chapel of Mas Muntayans, located on the estate, along with the vineyards where this wine is grown, reflecting the connection between the terroir, tradition, and the grape that defines it. It is a classic of the winery that reflects the long winemaking history of Pinord.
Variety
Cabernet Sauvignon 100%
Terroir
Plot 69 of the Mas Muntayans estate is set on clay-limestone soil, ideal for growing Cabernet Sauvignon. The proximity to the Mediterranean Sea provides a beneficial breeze for the vines, while the hill where the plot is located protects the vines, creating a mild and balanced climate, perfect for viticulture.
Winemaking Process
This wine is made from carefully selected grapes from plot 69 of the Mas Muntayans estate. After fermentation and maceration at a controlled temperature for about 20 days, it is aged for two years in French and American oak barrels. Finally, it rests for at least one year in the bottle, refining itself and achieving exceptional complexity and elegance.
Appearance
Deep garnet color with cherry-red tones, clean and bright.
Aroma
It is intense and complex, with a blend of red and black fruit aromas, such as cherry, blueberry, and raspberry. Notes of licorice, chocolate, and cocoa add depth and richness. A variety of spices, along with a mineral touch, complement this aromatic symphony, giving the wine great elegance and personality.
Taste
On the palate, a full-bodied, well-balanced, and rounded wine. Its smooth texture combines with mature fruit, licorice, and chocolate notes. Long, elegant and gastronomic finish. A wine that, once discovered, becomes an inseparable companion.
Serving temperature
18º
Food pairing and serving
This wine pairs beautifully with refined dishes. It is ideal for roasted or grilled meats, as well as cured meats, Iberian ham, and aged cheeses. Its complexity perfectly complements dishes with prunes and pine nuts, as well as chorizo and spiced stews. It is also a great match for dark chocolate and spicy dishes, where its structure and character leave a lasting and delightful impression.
