Terroir

The terroir of DOCa Rioja is characterized by its exceptional conditions for viticulture, with a great variety of soils and a moderate continental climate. The vines grow on terraces at different altitudes, with a high thermal variation between day and night, which favors optimal fruit ripening. These conditions allow for wines of excellent quality, complexity, and terroir expression.

Winemaking Process

This wine is made from grapes grown in the northernmost part of La Rioja. The grapes are fermented at 30ºC and macerated for thirty days, with daily and prolonged pump-overs. The wine has been aged for 480 days in American oak barrels. After a necessary and appropriate resting period, it was bottled to complete its maturation.

Appearance

A clean and bright wine, with a medium-high color layer. It has a ruby red hue, with slight tile-colored reflections.

Aroma

Intense tertiary aromas, with hints of smoke and cinnamon, licorice and raisins, along with enveloping and honeyed caramel and spice notes. It finishes with a soft balsamic sensation.

Taste

A light and elegant wine, velvety, with a balanced and silky structure. On the retronasal passage, notes of toasted flavors and mocha toffee are perceived. The long and pleasant aftertaste leaves a good acidic and tannic sensation on the tongue.

Food pairing and serving

This wine pairs perfectly with red meats, such as a grilled ribeye steak or an oven-roasted lamb, which complement its structure and complexity. It also goes wonderfully with braised meats, such as a beef stew or rabbit with mushrooms, enhancing the licorice and spice notes of the wine. It is also an excellent match for aged cheeses with texture, such as Manchego or aged Parmesan. A dish of sautéed mushrooms with garlic and herbs would also be an excellent option to highlight the balsamic and woody nuances of this wine.
