Essence of the wine
Dibon refers to the name of the family estate, Masía Dibon. It is mainly produced from vineyards located in the heart of Penedès, next to the estate and close to it. For this reason, the cava is named Dibon, as a tribute to our roots and family tradition, directly linked to the place where it was born and which has witnessed our history.

Terroir
The Penedès terroir is characterized by its diversity of soils and microclimates, ranging from limestone to clay soils, which favor the unique expression of each grape variety. The influence of the Mediterranean Sea and the nearby mountains creates a perfect balance between freshness and ripeness, providing wines with great complexity and personality.
Winemaking Process
The grapes are carefully selected in the vineyard, and each variety is harvested and vinified separately. The grapes are gently pressed to obtain the first-press must, which undergoes static settling for 24 to 48 hours before the first fermentation in tanks. Afterwards, the blending takes place, and through the traditional method, the second fermentation occurs in the bottle. The bottles rest in the cellar for about 15 months, acquiring a delicate, elegant, and well-integrated bubble. Once the process is completed, disgorging is carried out, and the cava rests in the winery for one month before being released.
Appearance
Pale yellow with golden reflections, bright and clean. With a fine and persistent bubble that forms a constant stream in the glass, showcasing its elegance and freshness.
Aroma
Aromas of white fruits such as green apple and pear, citrus notes like lemon, and floral hints of orange blossom, fennel, or rosemary. Saline and mineral aromas can also be perceived, derived from the limestone soil and proximity to the Mediterranean Sea. Its complexity is enriched by light bakery notes, such as almonds, typical of its aging, giving it depth and elegance.
Taste
On the palate, this cava presents a very fine and well-integrated bubble, providing a silky and very elegant texture. The acidity, perfectly balanced, brings freshness and structure. Notes of white fruit such as green apple and pear stand out, with citrus and floral nuances. A slight salinity and minerality are also perceived, derived from the limestone soil and proximity to the Mediterranean Sea, adding complexity and depth. The finish is clean, persistent, refreshing, and very well-balanced, making it highly gastronomic.
